With the summer holidays just round the corner, we’ve had a couple of school/ kindergarten “end of the year” parties. For one of those events I made this salad, it went down very well and one of my friends asked for the recipe…so this is for you Francesca. Ingredients 500g/ 17.6oz couscous 600ml/ 1.2pt vegetable stock 5 tbsp olive oil 10-12 apricots 200g/ 7oz pistachio nuts 100g/3.5oz sultanas 1 handful of mint leaves Dressing 5 tbsp olive oil 1 1/2 limes (juiced) (1 tsp of honey if you like) salt, pepper & couscous seasoning (coriander, cumin, chili, anise, mustard seeds, cinnamon) Boil 600ml of stock, take off the cooker and pour the couscous into the pan. Leave to soak for about 5 minutes. Add 5 tablespoons of olive oil and stir it with a fork to get rid of any clumps. I came home yesterday evening from the kids training, to find a bowl brimming with delicious, luscious raspberries on my doorstep. It didn’t take me long to find out where they came from…due to a missed call on my mobile. My very lovely, elderly neighbours (am I allowed to call them that? They are over eighty!) dropped them by. So I just couldn’t resist making this post… The Ingredients 1 bowl of raspberries 1 bottle of raspberry sirup/squash 500g/ 2 cups mascarpone or philadelphia 500g/ 2 cups low fat curd cheese 400g/ 13.5 ozs sponge biscuits 1 bunch of mint Mix the mascarpone and the curd cheese together and put half the mixture in a separate bowl. Stir in a couple of handfuls of raspberries and a dollop of sirup into to one of the bowls to create the raspberry creme. Lay the sponge fingers into the form (25x15cm) and soak with the sirup, spoon the raspberry creme over them and place another layer of sponge fingers on top, drizzle some sirup over the sponge fingers …
Today is our last day of our summer holidays, which also means our last hike. We took the train this morning from “Zuoz” (the village we’re staying in) to “La Punt-Chaumues-ch”. From there we hiked up the hill. The first half in the bright sunshine with the temperature at about 25°C/ 77°F (which felt a lot hotter), the second half of the climb (thank goodness) was in the woods! When we got to the top, we followed the path above “Madulain”… …down to a little stream, where we had some lunch. Feeling refreshed, we took off on our last leg of the hike to “Zuoz”. Even if we’re a bit tired after a hike, it’s always worth the effort!
We can’t sit still…as you might of gathered. After hiking and biking (sorry no bike post, as it’s difficult to take pics while climbing up and whizzing down hills), it’s time for some climbing at the climb park in Pontresina. After a safety introduction it was time to hit the ropes. The younger children (4-6 years old) go on a course that’s about 1.5-2m/5-6.5ft above the ground, the older ones (7-8 years old) are up at about 2-5m/6.5-16.5ft and our oldest was up in the trees at 5-15m/16.5-49ft!!! We can’t hang around all day…😉 We’ve got a little person in our family that loves horses. Well to be honest, as soon as they get to close, she gets a bit intimidated by there size. That’s why she decided to go pony riding instead, only to realise that they where to big too, so she ended up on a…donkey! With her older brother joining in for support…they were off! After all the hiking we did in the past week, we decided to have a break. So we took the kids to the restaurant “Lej da Staz”. There they have a little outdoor stage, where on Sunday afternoons, a story is told. Today it was the well known classic “Heidi”. And of course we couldn’t let the kids miss out on an ice cream (well not only the kids, but as I’m behind the camera you can’t see mine)… …after the story, it was time for a dip in the 19°C/ 66°F mountain lake… …with thunderclouds gathering on the horizon and everyones teeth chattering it was time to head home. Another day, another hike. “Ils Lejins” is a 3 hour hike, that goes from lake to lake, up on the mountain “Furtschellas”. It starts at the top of the cable car station (2313 meters/ 7585 ft above sea level). The first bit is a 300m (984 ft) climb up to the first lake. And a dip in the lake, was every bit worth the steep climb, just look at our happy doggy! From then on it was more or less flat… …not that, that means we didn’t need refuelling… …we hit the trail again, only to see our first marmot! (For you it’s that tiny spec on top of the pile of rocks) The way back to the cable car, was spectacular views and beautiful lakes all the way. (And of course a couple of rocks had to be thrown in the lakes on the way.) With tired legs (well some of us) we enjoyed the ride back down in the cable car.
Our latest adventure, was a 50 minute walk, to “Vadret da Morteratsch”. A once majestic glacier that is rapidly melting, which was made very clear by the markers along the way, showing where the snout used to be (1880, 1900, 1920 etc.). We started of at the restaurant Morteratsch, crossed over the railway tracks and hit the trail. The closer we got to the snout, the more our surroundings turned from luscious green to ragged rocks. The last marker shows where the snout was in 2015…only two years ago! We explained about the glacier melting to the kids, although the younger ones probably aren’t old enough to understand. Yesterday we took a leisurely stroll (45 minutes) under blue skies from “Celerina” (the village next to St. Moritz) up to the mountain lake “Lej da Staz”. If you like, just come along… The lure of the ice cold lake proved to be to great for some of us… …after a lot of paddling and trying to catch fish (by hand), it was time for a bite to eat and to head back. After packing, tiding up the house and garden, making sure the cat and post are being looked after, it was time for half the family to catch the train off to Zuoz our summer holiday destination in the Swiss alps. It was only half the family because Mr. T and the boys decided to take their bikes, which of course didn’t leave much room in the car 😉, but I’m not complaining as the train ride is spectacular and very relaxing… …and of course having a welcoming committee (our youngest son & doggy) with a chauffeur (Mr. T) that whisked us off to our chalet was rather nice! So, here goes! Day two… After a more or less good nights sleep (due to the altitude and our daughter falling out of bed).We packed our bags and headed downstairs for breakfast. We enjoyed a delicious spread and even saw some rays of sun. All in all, things seemed to be looking up! Full of energy we started our hike back. Only for the weather to take a turn for the worse, as soon as we took off… …but although we didn’t have the best weather… …we still had a great adventure!
