Rustic Pumpkin Pie

Pumpkin is a perfect ingredient for a rustic recipe. With the kids due back from school (it’s absolutely pouring outside), they’ll definitely need a little warming up with some comfort food… The Dough 300g/10oz flour 1 tsp salt 100g/3.5oz butter 10 tbsp water The Filling 1 Onion 1kg/ 2.2lbs Pumpkin The Topping 3 Eggs 3dl/0.6pt Milk a couple of twigs of thyme nutmeg, salt & Pepper pumpkin seeds Make the dough and leave to chill for about 30 minutes. In the meantime chop up the onions finely and the pumpkin into rough cubes. Fry the onions until slightly brown. Steam the Pumpkin for about 15 minutes. Preheat the oven at 250°C/ 482°F. When done, roll the dough out and put it in your pie tray. Layer the onions on the base and cover with the pumpkin. Pour the Topping over it all and garnish with pumpkin seeds and thyme. Apple & Pumpkin Autumn Treat

It’s Autumn, my favorite season and I feel like celebrating it, so what better way than with a cake. I popped over to our local farm and bought some pumpkins for this delicious and autumnally treat. The Ingredients 350g pumpkin 2 apples 150g braun sugar 150g spelt flour (or plain flour) 150g ground almonds 1 lemon 120g butter 3 eggs 3 tbsp milk 1 sachet of baking powder 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp cardamom Preheat the oven at 180°C. Mix the dry ingredients together (flour, sugar, almonds, baking powder and spices). Add the butter and eggs. Mix in the chopped apple (soaked in lemon juice), the grated pumpkin and stir in the milk. Put the mixture in a cake tin (mine has a diameter of 24cm) and bake for 40-50 minutes. Treat yourself… I did!

Spellbound Halloween Decorations

This has been a busy week getting ready for Halloween. There have been pumpkins, costumes, decorations and treats to organize. My first task was the pumpkins. This year I decided to do something different… …and of course a witches house isn’t complete without a welcoming spell and a couple of bats… “witches hat and broomstick, witching is a children’s trick” (doesn’t rhyme quite so well in english) The wicked witch’s house is ready!

Pumpkin Pear Pizza

Looking for a different pumpkin recipe? This is it. A combination of pumpkin and pear on a pizza base with a delicious spread. Pumpkin pizza anybody? The Ingredients Dough 350g spelt flour 7g dry yeast 1/2 tsp sugar 1/2 tsp salt 1.5 dl water Spread 200g sour creme paprika salt pepper Topping 200g pumpkin 1 pear 1 onion 100g beacon 200g brie or gorgonzola The Dough throw the dough ingredients together an knead The Spread mix the spices with the sour creme The Topping peel pumpkin into thin slices slice the pear Slice the onion finely cut beacon into 1 cm stripes and the brie into cubes Preheat the oven at 235°C. Now it’s time to put it all together Roll out the dough to fit the baking tray and fold it twice, put it in the tray and unfold. Don’t forget to put the baking paper in the tray first (I did, but luckily realized before I started with the spread).
