Get Your Greens Here!

It’s definitely time to do a Spring post so here goes…. A delicious way to enjoy your greens (and a cheeky way to get the kids to enjoy them too). It’s a courgette, parsley and spinach pizza, with a crème fraiche base. The Ingredients pizza dough 200g/ 7oz crème fraiche 2 egg yolks 150g/ 5.2oz grated gruyère 2 spring onions 1 courgette 100g/ 3.5oz spinach 1 bunch of parsley salt & pepper Preheat the oven at 200°C/ 392°F. For the base mix the egg yolks, the crème fraiche, 100g/ 3.5oz grated gruyère and 3/4 of the parsley together and season with salt and pepper. Roll out your pizza dough and spread the base over it (leave an edge of about 1cm free). Cover with fine slices of courgette and spring onion. Cover with the spinach and sprinkle with the rest of the gruyère. Bake for about 10 minutes. Enjoy! …maybe it should have a cool name for the kids… Power Pizza, Galactic Green Pizza or something like that.

Sweet Potato and Apple Pizza

Yes, You read correctly! Today we’re having apple on our pizza, in my case it helps persuade the kids to eat my newest pizza creation (as I get a bit bored with the normal ones) and the great side effect is that it tastes absolutely delicious! The Ingredients 1 packet of pizza dough (ø24cm/ 9.4 in) (I didn’t have any time to make the dough today 🙂 ) Per Pizza 1 sweet potato 1 apple 1 red onion 125g/ 0.5 cups creme fraiche salt & pepper parsley Preheat the oven at 200°C. Slice the sweet potato, apple and onion. Spread the the creme fraiche on the dough. Season with salt and pepper. Lay the vegetables in layers on top and bake for 30 minutes.S Sprinkle some parsley and parmesan cheese on top… …and it will go down a treat! (I even got a thumbs up, from one of the kids friends, that was over for lunch)

Fig & Smokey Bacon Pizza

Fig & smoked bacon, a winning combination! It isn’t exactly the fist thing that would come to mind, but with figs being in season and some smoked bacon waiting to be put to good use… The Ingredients The Dough (ready made from the shop as this was a spontaneous idea and not having the time to make a dough -> hungry kids) The Topping 200g creme fraiche 1 onion 100g smoked bacon 6 figs Danish Smoked Salt from oz. (optional and very delicious) Pepper Preheat the oven at 220°C. Roll out Dough (or in my case get it out of the packet) and lay it on the baking tray. Add seasoning (salt & pepper) to the creme fraiche and spread over the dough. Slice the onion and the figs and layer them on the base. cover with smokey bacon and bake for 20 minutes. Try it and enjoy!

Smoked Salt Bacon Pizza

How does that sound? Intrigued? You’ve got to give it a go! Thanks to the delicious Danish Smoked Salt from oz. This is a winner! Not only is it very easy to make but while it was in the oven it filled the kitchen with a scrumptious smell…divine. The Ingredients 150g bacon 200g spinach 1 onion 200g creme fraiche 1tsp Danish Smoked Salt from oz. pepper The dough 250g flour 1tsp salt 2tbsp olive oil 7g drie yeast 1.5dl water Prepare the dough and leave to rise for about 3/4 of an hour. Preheat the oven at 200°C. Steam the spinach and fry the bacon. For the spread add the Danish Smoked Salt and some pepper the creme fraiche. Slice the onion finely. Roll out the dough, put the spread on it, sprinkle the onion rings over it, then add the spinach and last but not least the bacon. Pop in the oven for 25 minutes. Voilà! For serving we grated some parmesan over and it definitely got the thumbs up…

Pear & Prosciutto Pizza

Anyone for pizza? A change form the usual tomato and mozzarella? Try this… The Ingredients Dough 350g spelt flour 7g dry yeast 1/2 tsp sugar 1/2 tsp salt 1.5 dl water Spread 200g sour creme paprika salt pepper Topping 1 sliced pear 150 g Prosciutto 1 onion 250g Taleggio (or any cheese you like) Preheat your oven at 220°C. Make the dough and leave to rise. In the meantime prepare the spread and topping. When the dough is ready, roll out and lay it in your baking tray. Cover the base with the spread and add on a layer of onion rings,then the pear, the Prosciutto and on top of it all the Taleggio. Bake for 20 minutes. Enjoy your unique pizza!  

Pumpkin Pear Pizza

Looking for a different pumpkin recipe? This is it. A combination of pumpkin and pear on a pizza base with a delicious spread. Pumpkin pizza anybody? The Ingredients Dough 350g spelt flour 7g dry yeast 1/2 tsp sugar 1/2 tsp salt 1.5 dl water Spread 200g sour creme paprika salt pepper Topping 200g pumpkin 1 pear 1 onion 100g beacon 200g brie or gorgonzola The Dough throw the dough ingredients together an knead The Spread mix the spices with the sour creme The Topping peel pumpkin into thin slices slice the pear Slice the onion finely cut beacon into 1 cm stripes and the brie into cubes Preheat the oven at 235°C. Now it’s time to put it all together Roll out the dough to fit the baking tray and fold it twice, put it in the tray and unfold. Don’t forget to put the baking paper in the tray first (I did, but luckily realized before I started with the spread).
