Getting in the Spirit

It’s the first Sunday of Advent. Our reef is ready to be lit. So to get a little christmassy, I decided to bake some gingerbread men. I love it when the house smells of Christmas spices and baking with the little ones is always fun, if maybe a little bit messy. The Ingredients 500g flour 1tsp baking powder 1tsp salt 2tsp ginger 2tsp cinnamon 1tsp nutmeg 1tsp cloves 200g butter 200g sugar 250g honey or maple sirup 2 eggs Preheat the oven at 200°C. Mix all the ingredients together, if the dough becomes to sticky add a little more flour. Roll it out to a 7mm thickness on a lightly floured surface. Use cutter to cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them. Bake for 10-15 minutes. I hope you enjoy Advent!

Autumn Apple & Oats

Today started off all grey and foggy but the sun has managed to burn up all the fog. Mr. T and the kids have gone off to take the dog for a walk while I catch up on my painting. I couldn’t resist a break to soak up some of the sun and as we had run out of biscuits I had a great excuse to make these. The Ingredients 150g oats 220g flour 1tsp baking powder 1 pinch of salt 100g brown sugar 100g butter 1 egg 1tsp cinnamon 1 sachet vanilla sugar 2tbsp milk 3tbsp apple purée 200g chopped apples Preheat the oven at 180°C. Stir the oats, flour, baking powder and salt together. Mix the butter, sugar, egg, cinnamon, vanilla sugar and milk together. Chop up the apples, put them in the apple purée and add the egg and the flour mixtures. Stir well. Form the mixture into oversized walnuts and put them on the baking tray. Bake for 15-20 minutes. Coffee Break!

Hazelnut Stick Biscuit

There’s a snowstorm raging outside… …I’m in the warmth enjoying some baking. The Ingredients 100g butter 1 egg 1 pinch of salt 1tsp cinnamon 100g brown sugar 125g ground hazelnuts 150g flour 1 handful of dried apricots Preheat the oven at 200°C. Mix the ingredients to a dough. Roll out the dough to a rectangular shape, it should be about 7mm thick. Then cut in into sticks and coat with egg yoke before baking for 10-15 minutes (mine got a bit dark with 15 minutes). Make a cup of coffee and relax…
