Delicious Fruit Treat

I’m back from my summer break and ready to spoil you with a deliciously fruity treat. Something to enjoy while you relax in some of the last rays of summer. But beware! It has addiction potential… The Ingredients The Dough 200g/ 1Cup flour 2tbsp icing sugar 100g/ 0.5Cup butter 55ml water 1tsp salt The Filling 2 apples 6 plums 100g/ 0.5Cup blackberries 3tbsp brown sugar 1tbsp corn starch The Topping milk to brush the edges 2tbsp sugar 0.5tsp cinnamon Preheat the oven at 200°C (392°F). Mix the ingredients of the dough together and leave to chill in the fridge for about an hour. Wash and prepare the fruit (slice the apples and the plums). Add the Sugar and Corn starch and mix carefully. Roll the dough out to a circle of about 30cm diameter. Put the filling in the middle leaving a rim of about 3-4cm. Fold the edge in over the filling. Get Your Greens Here!

It’s definitely time to do a Spring post so here goes…. A delicious way to enjoy your greens (and a cheeky way to get the kids to enjoy them too). It’s a courgette, parsley and spinach pizza, with a crème fraiche base. The Ingredients pizza dough 200g/ 7oz crème fraiche 2 egg yolks 150g/ 5.2oz grated gruyère 2 spring onions 1 courgette 100g/ 3.5oz spinach 1 bunch of parsley salt & pepper Preheat the oven at 200°C/ 392°F. For the base mix the egg yolks, the crème fraiche, 100g/ 3.5oz grated gruyère and 3/4 of the parsley together and season with salt and pepper. Roll out your pizza dough and spread the base over it (leave an edge of about 1cm free). Cover with fine slices of courgette and spring onion. Cover with the spinach and sprinkle with the rest of the gruyère. Bake for about 10 minutes. Enjoy! …maybe it should have a cool name for the kids… Power Pizza, Galactic Green Pizza or something like that.

Orange, Ginger & Cranberry Cupcakes

A little something to cheer things up…It’s grey and cold outside, the perfect excuse to bake some cupcakes. If you feel like joining in, then get your spoons spinning! Ingredients 125g/4.4oz butter 3 eggs 125g/4.4oz sugar a pinch of salt 1 orange (zest and juice) 1tsp ginger 100g/3.5oz cranberries 250g/8.8oz flour 1 sachet (1tbsp) baking powder Preheat the oven at 180°C/ 356°F. Mix the ingredients together. Fill the mixture into your cupcakes (the mixture is just enough for a dozen) and put in the oven for 28 minutes. As an extra treat you can top them off with some icing. Delicious!

Ready For Some Rhubarb Pie?

Get your rolling pins out. It’s pie time! While shopping this week, some delicious rhubarb caught my eye. I couldn’t resist. So here goes… a scrumptious, rhubarb loaded pie. The Dough 125g/ 4.4 oz butter 250g/ 9.0 oz flour 100g/ 3.5 oz sugar a pinch of salt 1/2 tsp lemon zest 1 egg The Filling 700g/ 24.5 oz rhubarb 80g/ 2.8 oz sugar 1 tsp vanilla paste (or vanilla flavouring you prefer) 1 tsp cinnamon 80g/ 2.8 oz ground almonds 1 egg yolk (to braise the pie with) icing sugar (decoration) Make the dough and leave to chill for about 30 minutes. Preheat the oven at 180°C/ 356 °F. For the filling, chop up the rhubarb in about 1 cm wide chunks. Mix the rhubarb, sugar, cinnamon and vanilla flavouring together. Grease your pie dish. Split the dough in half (base and lid of pie) roll it out and lay into your dish. Prick the base and cover it with the ground almonds. Fill it with the mixture and place the dough lid on top. …

Autumn Almond & Pear Cake

Autumn is well on its way. With chilly temperatures and nearly all the leaves off the trees (plenty of rake work to be done in the garden), it feels as though winter is just round the corner. So what better way to enjoy a snug afternoon than with mug of tea (or coffee in my case) and a scrumptious piece of cake. Ingredients 3 eggs 125g/ 0.5 cup unsalted butter, at room temperature 125g/0.5 cup sugar a pinch of salt 1 tsp cardamom 3 small/medium ripe pears, peeled, cored and chopped 75g/ 0.3 cup flour 200g/ 7 oz ground almonds 1/2tsp baking powder 50g/1.7 oz flaked/sliced almonds Icing sugar, for garnish For serving (optional) 1 orange 100g/ 3.5 oz mascarpone cheese icing sugar Pre-heat oven to 180°C/ 355° F. Grease an 20cm/8-inch springform pan and line the bottom with a round of parchment paper. Prepare pears, by peeling, coring and chopping. Brighten up your day with a “Beetroot Bake”

I can’t resist the luscious color of beetroot and as I love an experiment (not always to the delight of the kids)…Here’s my go at a beetroot and feta cheese quiche. Be warned, just the smell while your cooking the onions, beetroot and thyme is absolutely delicious! The Ingredients Dough 150g flour 1/2 tsp salt 50g butter 4-5 tbsp water Quiche 1 red onion 500g/ 17.5 oz beetroot a bunch of thyme olive oil 5tbsp white wine vinegar Topping 5 eggs 250ml/0.5pt(U.S.) double creme salt and pepper 200g/ 7oz feat cheese Make the dough and leave to chill for about 30 minutes. Preheat the oven at 175°C/347°F. Slice the onions and the beetroot. Chop up the thyme. Roll out the dough and place in a greased or paper lined quiche tray and bake for 10minutes. While the base is baking, fry in the onions, Beetroot and thyme. Leave the base and the cooked veggies to cool down, then place the veggies on to the base, pour the topping over them and crumble the feta cheese over …

Anyone for some Spring Energy?

We’re back from our ski holiday and after all the snow fun, I’m ready for Spring! Only it’s the end of February and probably a little early, but I’m bursting with energy. Maybe I could start with the spring cleaning? But before I get started, here’s some spring energy (bars) for you… The Ingredients 200g/ 1cup nuts (Hazelnuts,almonds,cashew nuts or any other you like) 200g/ 1cup oats 200g/ 1cup dried fruits (apricots, figs, cranberries, like above)) 130g/ 0.5cup butter 120g/ 0.5cup honey 2 egg whites Preheat the oven at 175°C/ 347°F. Chop up the nuts and roast until golden in a pan (without oil or butter). Chop up the fruit while the nuts cool down. Melt the butter with the honey and whip the egg whites. Mix it all together (add the egg last). Place into a baking tray, make sure it is a compact rectangle. Bake for about 25 minutes. Leave to cool for at least 10 minutes and then cut into bars. Coconut Cupcakes versus Winter Weather

It’s foggy, very cold and generally just gloomy (and it’s been like this for at least a week or so). I definitely need to cheer things up! And nothing works better for me, than a run (yes, even if it’s freezing) and some baking. Since I’ve been already been out for my run, I can now indulge in some baking… The Ingredients 2 banane 13oz/360g greek yoghurt 2tbsp honey 2tbsp coconut oil/fat 4tbsp grated coconut 4tbsp quinoa flour or plain flour 2tbsp coconut flour 2tsp baking powder 1 pinch of salt 8 handfuls of blueberries Preheat the oven at 356 °F/ 180°C. Mash up the bananas with a fork, add the coconut oil/fat, the honey and mix. Then add the rest of the ingredients and stir. don’t add the blueberries until the end and only mix slightly (otherwise the dough becomes a purple mess). Bake for 25 minutes. Now all you need to do is make yourself comfortable and enjoy!

Nut Loaf…A Winter Warmer

It’s snowing outside. The kids are due home from school soon (well maybe the quarter of an hour walk home will take a bit longer today, with all their snowball fights on the way). I reckon they will need warming up (and their gloves drying). Here’s my way of giving them some warmth back… The Ingredients 1 small head of cauliflower 200g/2 cups quinoa 1 large onion, diced 2 cloves garlic, finely chopped or grated 500g/1 pound fresh mushrooms, finely chopped olive oil 2 cups toasted hazelnuts, finely chopped 1/2 cup toasted almonds & walnuts, finely chopped 5 large eggs 1 1/2 cups cottage cheese 150g/12 ounces grated cheese (Gruyère, cheddar, or Parmesan) 1/2 cup mixed chopped fresh herbs such as parsley, oregano, thyme, sage salt & freshly ground pepper a handful of dried cranberries or apricots (it always goes down well with the kids) Sliced mushrooms, for decoration (optional) Preheat the oven at 200°C/350°F. Merry Christmas

Christmas is here and here’s a one of my favorites … cinnamon stars. The Ingredients 3 egg whites 1 pinch of salt 200g icing sugar 1 tbsp cinnamon 1 tbsp lemon juice 350g finely ground almonds Beat the egg whites and salt. Gently sieve the icing sugar into the egg whites until shiny.Take a third of the egg white mixture out of the bowl and save for the icing. Add the cinnamon, lemon juice and almonds. Mix until it turns into a dough.Roll out to about 1 cm thick and start cutting out the stars. Now use the leftover icing sugar to decorate the stars. Leave for a couple of hours then put in the middle of the preheated oven (250°C) with the door slightly open for three minutes. With all the preparations done, all that’s left, is to wish you all a very Merry Christmas, Your Tammy Twinkle
