Cool Cucumber Gazpacho

Summer has officially begun…sunshine, blue skies, shorts, t-shirts, flip-flops, running under the garden sprinkler (the kids), enjoying long evenings out on the patio (the grown-ups).
Here’s an ideal little something to sip in the shade while you enjoy your summer…

The Ingredients
(about 1.5L/ 2.1pt)

2 cucumbers, peeled, halved, pitted and chopped
3dl/ 0.63pt vegetable stock
1 onion
1 clove of garlic
4tbsp olive oil
100g/ 0.2lbs bread cubes

a couple of twigs of parsley
salt & pepper

Make the stock and add to all the ingredients. Purée and add the seasoning. Chill for a couple of hours (if your a little bit better organised than I am, you can prepare it the day before and leave it to chill over night). Thats it, you’re done!

  1. Just stopped typing in hot garden and thought what shall I eat? Read this! Thank you so much, won’t get two hours chilling first time though, just batch of frozen plastic cubes…

  2. This time, not even your pictures can convince me to try this soup. The bread yes. Cold soup, no. I just can’t get my head around it. But cheers to summer. Four days to go until we are done.

  3. A hot summer day today and your cucumber soup will be on our dinner table this evening. The recipe is perfect. Dear girl, your photographs had me going back and forth … simply admiring, oohing and ahhing. Bravo. Creative in all ways. Bon Appetit Virginia

  4. Hi Thanks for this lovely recipe. It sounds gorgeous. I am always looking for vegan recipes so I’m really glad that I came across yours. I will make this and I’m sure I will love it. I think your blog is fantastic and I’m actually sat in my house reading all of your blogs this afternoon which is contributing to my lovely day. Keep the coming. Thanks for a great read.

  5. This sounds like it would be amazing!!! We’re about to get some warmer weather here in Maine. I’ll have to try making this this week. I see that you spent some time in Switzerland?!?! I’ve never been but have always wanted to go. I was once gifted a pack of Frey Branches, and it was, without a doubt, the best chocolate I’ve ever had. I didn’t even share any with my husband.
