Parsley Soup…Please

The green leaves have disappeared for that reason a certain little person decided that they didn’t have to eat anything green until spring. I don’t know where they get these ideas from. But luckily this soup is so “yummy” that it didn’t need much persuasion.

The Ingredients
1 small onion
1 knob of butter
1 small bread bun
500ml of vegetable stock
1 bunch of parsley
salt, pepper, nutmeg

chop up the onions and the parsley

Fry the onions in the butter. Soak the bread crumbs in the stock, pour the stock over the onions and add the parsley. Season with the salt, pepper and nutmeg.

Leave to simmer for 20 minutes, then purée. If catering for kids I would serve it with a dollop of cream and crispy beacon (goes down a treat for grown ups too).
