Chocolate Cranberry Comfort Cake

It’s pouring down with rain and freezing cold, we’ve just got back from dog walking and I’ve decided that we definitely need cheering and warming up! What better way than with a homemade chocolate cranberry cake.

3 eggs
125g butter
125g sugar
a pinch of salt
200g flour
1 sachet of baking powder
100g ground hazelnuts
100g dried cranberries
a couple of tbsp of chocolate powder
1 tsp cinnamon

Preheat the oven at 180°C. Mix it all together and pour in to a greased cake tin and bake for about 50 minutes. The result is a juicy chocolate cake and a home filled with the delicious smell of it.

Now it’s time to get the fire going, snuggle up with a good book and enjoy the rest of this rainy afternoon…

  1. It looks irresistable, I don’t like chocolate cakes and try to reduce butter, but I am going to bake this cake tomorrow with only one desicion to make what gluten free flour to use. I might go for millet flour. Enjoyed your recipes and photography. The food is shining. Thank you.
