A simple and quick aubergine recipe (my favorite if you don’t have time to cook).
200g minced meat
(for a vegetarian option just switch the meat with mushrooms)
200g feta cheese
1 clove of garlic
1 handful of parsley
salt and pepper for seasoning
Preheat the oven at 200°C. Half the aubergines and use a teaspoon to scoop out the insides, leaving a rim of about 1cm.
(leave the left over aubergines to the side for filling later)
Chop up the left over aubergine, onions and garlic.
Heat up the frying pan, add the aubergine, onions, garlic and mince meat. Fry until meat is brown. Crumble 150g of the cheese over the pan and keep staring until it melts. Add the parsley and take from heat.
Put the aubergine halves into a gratin dish and spoon the mixture into the aubergine halves.
Crumble the rest of the cheese over the halves and put in the oven for 15-20 minutes.
(just enough time to clear up and lay the table)
