Warm Apple Cake For A Stormy Day

It’s pouring outside and there’s a ghastly wind blowing. While I was out with the dog I got drenched. It didn’t matter in which direction I held the umbrella, the wind soaked me either way. But I forgot all my troubles when I opened the front door because I’d put this cake in the oven before I left, so I got home to the delicious smell of…mmmmhhhh Apple Cake!

4 apples
3 eggs
125g brown sugar
125g butter
a pinch of salt
200g flour
100g finely ground hazel nuts
1 sachet of baking powder
1 sachet of vanilla sugar
1 tsp of cinnamon
1 lemon
3 tbsp apricot jam

Preheat the oven at 180°C. Mix the eggs, sugar and butter until soft and creamy. Add the flour, salt, hazelnuts, baking powder, vanilla sugar, cinnamon, milk and lemon juice. Stur well and pour into baking tray.

Peel the Apples, cut them in quarters and remove the core. Cut slits into the quarters and place in the baking tray.

Melt some butter in a pan and brush it onto the apples.

Put in the oven and leave to bake for 45 minutes. When done, heat the jam and brush it all over the cake.
