Vacated Veggie Patch…

I’m sad to say goodbye to our veggie patch for this year. I haven’t got a green thumb (just look at my leeks that look more like dune gras than leeks and some of my courgettes decided to only produce beautiful blossoms but not courgettes) but I’m a keen learner and I seem to have a good hand when it comes to tomatoes. I’ve harvested the last of them, now it’s time to clear up and put those last tomatoes to good use.

Putting the tomatoes to good use in a risotto

Ingredients:
a couple of handful of chopped tomatoes
an onion
a clove of garlic
200g risotto rice
6dl bouillon
seasoning

chop the onions, garlic and tomatoes

Fry the onions, garlic and rice for a couple of minutes. Turn the heat down, add the bouillon and simmer for about 20 minutes. Give it a stir now and again so that it doesn’t catch on the bottom of the pan. Serve with some grated parmesan.
