Courgette Cake?

No flour? No butter? Yup, and very tasty. We’ve got courgettes growing in our garden so I was looking up recipes. I found this one very interesting and had to give it a go.

1 grated courgette
200g ground hazelnuts
2 tsp cinnamon
1/2 tsp cardamom
3/4 tsp baking soda
1/2 tsp sea salt
3 eggs
4 tbsp honey
1 banana

Preheat the oven at 180°C. Grate the Courgette, add the hazelnuts, spices, eggs, honey and banana.

Stir the mixture well. Great the cake tin with coconut oil and pour the mixture in.

Pop in the oven for 40 minutes and hey presto one very nourishing cake. It can also be served to family and friends with gluten and lactose intolerance.
