We had some friends and family round at the weekend. One of my friends bought a Quinoa Salad, I must admit I had never heard of quinoa before and I kept on having to ask “what is it called? Quini? Quanoi?” “- QUINOA!-” right. Got it. I enjoyed so much that I had to give it a go…
Ingredients for the salad
150 g quinoa
1 red pepper
a bunch of coriander
a bunch of rocket salad
Ingredients for the dressing
2 tbsp olive oil
1 tsp honey
1 tsp caraway
salt and pepper
1 red onion
Leave quinoa in a pan of 400ml of salted water to simmer for about 20 minutes and then leave to cool down.
In the meant time, squeeze the juice out of the limes and pour it in to a glas with the olive oil.
Mix in the honey, caraway and season with the salt and pepper. Chop up the red onion, add this also to the dressing and stir well.
Now it’s the veggies turn. Chop the red pepper and avocado to small cubes. Chop the coriander, rocket salad finely and add to the cooled quinoa.
Pour the dressing over it all and you have a very yummy, nourishing salad. In my case I served it with some pan fried salmon. Enjoy.
