With another beautiful day and I’m in need of something light and cool to eat. Although I love salad I must admit I have my limits. Thats why it’s soup today! Don’t worry a nice chilled vegi soup…Gazpacho.
250g white bread crumbs
500ml vegetable stock
500g tomatoes, peeled, chopped in cubes
1 cucumber, peeled, unseeded, chopped
1 red bell pepper, chopped
2 cloves of garlic
2 tbsp olive oil
salt, pepper and red wine vinegar for seasoning
Soak the bread crumbs in about half of the stock. Add the vegetables and oil then puree.Pour in as much of the leftover stock until it has a thick consistency. Use the salt, pepper and red wine vinegar for seasoning. Leave in fridge for about 2 hours. For serving I sprinkled it with pepper and decorated it with a couple of basil leaves.
