My neighbor brought over a dozen sticks of rhubarb from her garden. So I went through my recipe books and found this delicious cake. I must say the picture in the book looked nothing like what came out of the oven. For some reason all my bits of rhubarb have decided to hide and have dived to the bottom of the cake.
100g chopped almonds
1 packet of baking powder
150g cream cheese
50g cream cheese for the topping
Beat the eggs and sugar, melt the butter and marzipan together and add to the eggs and sugar. Put in the almonds, flour, baking powder and cream cheese. Add the rhubarb and mix a last time before putting it in a round cake form (24cm diameter), scatter the 50g of cream cheese on top and bake for 45 minutes at 175°C.
Sprinkle with powder sugar and if you like serve it with crème fraiche.
