Comfort food – Cottage Pie

One of my Childhood favorites. Just the right thing for a grizzly day.

Mince Mixture

1 tbsp olive oil
1 onion
1 clove of garlic
500g minced beef
2 carrots
2 handfuls of peas
2 plum tomatoes chopped
2 tbsp tomato purée
1 can of chopped tomatoes
5 tbsp Worchestershire sauce
300ml chickenstock
seasoning: salt, pepper, thyme

Mash Potatoes

800 g potatoes
2-3 dl milk
40g Butter
Seasoning: salt, pepper, nutmeg


How to make it…

Fry onions and garlic in pan until slightly brown. Turn the heat down and add meat, carrots, peas, tomatoes (can and purée too), stir well. Pour in the chicken stock. Season with the Worchestershire sauce, salt, pepper and thyme. Leave to simmer for about 20 minutes.

In the meantime make your mash. Cook the potatoes in a pan of salted water until tender. Drain and return to hot pan for 15 seconds to dry out, mash smoothly. Mix in milk and butter. Taste and adjust seasoning.

Preheat the oven to 180°C. Fill mince mixture into the bottom of a pie dish. Spoon the mash on top and put in oven for about 30 minutes.
